FILLING:
6-8 tart apples
3/4 to 1 cup sugar
2 T flour
1/2 to 1 t. ground cinnamon
dash nutmeg
Slice apples and add remaining ingredients.
Here's the recipe for the pastry:
1 1/2 c. sifted all-purpose flour
1/2 t salt
1/2 c. shortening (I use crisco)
4-5 Tablespoons water (ICED WATER works best)
Sift flour & salt. Cut in shortening with pastry blender (or fork) till
pieces are the size of small peas. Sprinkle 1 T. of water over part of
mixture. Gently toss with fork..repeat til all is moistened. (If the
humidity is high, you will use less water) Pastry should all stick together
ultimately.
Separate into two balls. Use a rolling pin and roll into a large circle
(big enough to have an overlap in the pan). It helps to roll it between 2
pieces of waxed paper. I sprinkle a bit of flour on my counter top and roll
it out there...but I think this works well because I have the Corian.
Put the bottom crust in the pie pan. Fill with apples..Top with 2 T butter
(cut up) Cover with the top crust and squeeze the two crusts together....
I don't quite how to describe this... you know what it looks like and you've
seen me do it...right/?
Sprinkle sugar, and slit the top
Bake at 400deg for 50min
